Dexter Cattle 

Dexter originated in Ireland as a native feral breed of cattle. Their small stature and unique foraging ability made them the perfect animal for small rural holdings in Ireland. The quality of the Dexter for consumers is unmatched for both beef and milk production. They carry the sought after A2A2 genetics for milk proteins, multiple types of omega fatty acids, and their small stature creates short muscle fibers that make their meat exceptionally tender. Because of their muscle structure they are the ideal cattle for grass fed/grass finished beef. They can remain tender as the animal ages up to and well after 30 months before slaughter which allows ideal marbling to set into the meat without supplemental grain feed.

 

 As commercialization of beef production expanded during the industrial revolution, and larger animals with shortened maturity times became popularized for efficiency, the Dexter breed became nearly extinct and only recently has had a resurgence in herd populations across Europe, Africa, and the United States. Now in Europe and many areas of the United States Dexters are more and more sought after for their excellent beef quality and deep rich flavor.
