The Name
What Does Mahanaim Mean?
The name comes from the Book of Genesis. When Jacob was traveling home, he encountered a company of angels, and he named that place Mahanaim. In Hebrew, it means “two hosts” or “two camps.” It is a name that carries the presence of God.
We chose it for a reason. This farm is more than a business. It is a calling. We were introduced to agriculture through our faith, and we believe that farming at its best is a form of stewardship, tending the land with care because we recognize that it isn’t really ours to begin with.
Every animal we raise, every pasture we rotate, every package we send out is an extension of that conviction. We don’t take shortcuts here. Not with the land, not with the cattle, and not with the people who trust us to feed their families.

The Land

Our farm sits in the wide-open landscape of central New Mexico, a place of long horizons, dramatic sky, and land that rewards those who work with it rather than against it.
This is the first farm our family has operated, and we started it with a clear conviction: do it right from the beginning. No shortcuts. No compromises. We built our operation around regenerative agriculture principles before “regenerative” was a marketing term because we believed it was simply the right way to farm.
The land dictates the pace here. We rotate our cattle across pastures based on grass growth, not calendar dates. We let the land rest when it needs to, and we push it gently when it’s ready. Over time, the soil gets richer. The grass grows taller. The beef gets better.

Why We Chose
Dexter Cattle
When we were planning the farm, we spent a long time studying cattle breeds. There are faster-growing options. There are breeds that yield more pounds per animal. We chose Dexters anyway, and we would make the same choice again every time.
Dexter cattle have something the commercial industry has nearly bred out of its animals: personality. They are curious, social, and remarkably easy to manage on pasture. They thrive on grass in a way that larger breeds simply don’t. And the beef they produce, because of their genetics and their slow growth, is unlike anything you’ll find at a grocery store.
Heritage Breed with Ancient Genetics
Dexters are one of the oldest cattle breeds in the world, originating in Ireland. Their genetics produce naturally well-marbled beef that hasn’t been tampered with by industrial selection.
Built to Thrive on Pasture
Dexters are exceptional grazers. They convert grass into rich, well-marbled beef more efficiently than most commercial breeds, which means they’re perfectly suited for the regenerative pasture rotation we practice.
Healthier Beef, Naturally
Because Dexters are grass-fed their entire lives, their meat contains higher levels of omega-3s, conjugated linoleic acid, and vitamins A and E. Better animals raised better produce better nutrition.
