About This Cut

The New York strip comes from the short loin, a section of the steer that does moderate work. That balance between movement and rest gives the strip its signature combination: a firm, well-defined texture with enough intramuscular fat to deliver bold, beefy flavor in every bite.

In a Dexter steer, the short loin develops over a 30-month maturity cycle instead of the 16 to 18 months typical of conventional production. That extra time on pasture, eating grass from the first day to the last, builds a depth of flavor you don’t find in a steer rushed to market. The smaller muscle fibers characteristic of heritage Dexter cattle also produce a finer grain than conventional breeds, which means the strip eats more tender than its firm texture suggests.

Our New York strips are dry-aged for a minimum of 14 days after harvest. Dry aging concentrates flavor and allows natural enzymes to continue breaking down connective tissue. The result is a strip with a more pronounced beef character than wet-aged or conventionally raised equivalents. If you want a steak with genuine backbone, real chew, and flavor that holds up over a hot cast iron or an open grill, this is the cut.

COOKING NOTES

Best for: Direct high-heat grilling.

Thickness: 1–1.25 inches.

Prep: Season lightly; a small fat cap can help with basting.

Grill method: Preheat grill to 450–500°F. Sear 3–4 minutes per side for medium-rare. Leaner than ribeye, so less flare-up risk.

Tip: Cook quickly for best tenderness.
