About This Cut

The Ribeye is widely regarded as the most flavorful steak on the animal, and for good reason. It comes from the rib section, an area that does very little work, which means the muscle stays tender while still developing deep, complex flavor from the rich web of intramuscular fat running through it.

Ribeyes from heritage Dexter cattle are in a class of their own. Because Dexters grow slowly on a diverse diet of grasses and forages, never rushed with grain, their fat develops a richer, more golden color and a flavor that commercial beef simply can’t replicate. You’ll notice it the moment it hits the pan.

Each package contains one 14-oz Ribeye, vacuum-sealed and flash-frozen at peak freshness. Best cooked at high heat on cast iron or a charcoal grill with nothing more than salt, pepper, and a generous rest before slicing.

COOKING NOTES

Best for: High heat, direct grilling.

Thickness: 1–1.5 inches.

Prep: Pat dry, season with salt and pepper, and optionally rub with olive oil for a better sear.

Grill method: Preheat grill to 450–500°F. Sear over direct heat for 3–4 minutes per side for medium-rare. For thicker steaks, use reverse sear: cook indirectly to 15°F below target temp, then sear 1 minute per side.

Tip: Watch for flare-ups from marbling; move steaks away if needed.
