About This Cut

The filet mignon comes from the tenderloin, the long muscle that runs along the spine of the steer and does almost no work during the animal’s life. Because it carries so little load, the tenderloin develops the finest, most delicate grain on the animal. Very little effort is required from the knife or the jaw.

Conventional filet mignon is known more for texture than flavor. Dexter filet is different. A 30-month grass-fed and grass-finished maturity cycle gives the tenderloin a quiet depth that conventionally raised filet typically lacks. Dexter cattle also develop spider marbling, fine intramuscular fat woven through naturally smaller muscle fibers, which adds a clean richness without altering the filet’s characteristic softness. Dry-aged for a minimum of 14 days, our filet arrives with more flavor development than most people expect from this cut.

It still eats like a filet. It just tastes more like beef.

COOKING NOTES

Best for: Direct high-heat grilling.

Thickness: 5–9 oz, ~1 inch.

Prep: Season lightly; very tender.

Grill method: Preheat grill to 450–500°F. Sear 2–3 minutes per side for medium-rare. Cooks quickly—overcook easily.

Tip: Low fat content means less flare-up risk.
