About This Cut

The sirloin sits between the short loin and the round, which means it works harder than a strip or tenderloin but carries far more flavor. That position in the steer produces a meatier, more assertive beef character while staying tender enough to eat as a straight table cut. It is one of the most versatile steaks in the case, and in Dexter beef, one of the most underestimated.

A 100% grass-fed and grass-finished diet over 30 months of slow maturity produces the kind of spider marbling, fine intramuscular fat woven within the muscle, that conventional sirloin can’t replicate with grain feeding. That fat keeps the steak moist through high heat and delivers a clean, beefy finish that doesn’t coat the palate. Our sirloin is dry-aged for a minimum of 14 days, which deepens flavor and softens the grain without masking what makes grass-finished heritage beef taste different.

If you’re feeding a table or building a weeknight meal around real beef, the sirloin earns its place every time.

COOKING NOTES

Best for: Direct grilling, medium-rare ideal.

Thickness: ~1 inch.

Prep: Season lightly; leaner cut.

Grill method: Preheat grill to 450–500°F. Sear 3–4 minutes per side for medium-rare. Cook quickly to preserve tenderness.

Tip: Best cooked to medium-rare to avoid dryness.
