About This Cut
Short ribs come from the rib section, one of the most marbled areas on the steer. Unlike the leaner muscles surrounding the loin, the rib section carries layers of fat between and within the muscle groups. That fat is what makes short ribs a slow-cook cut worth planning for. Given time and low heat, it breaks down into the braising liquid and produces a richness that comes from the meat itself, not from anything added to the pan.
Dexter short ribs carry the same genetics and diet advantages as every other cut from the farm. Slower maturity at 30 months allows more fat development in the right places, and a 100% grass-fed and grass-finished diet shapes the character of that fat. Grass-finished fat carries a clean, mineral quality that grain-fed fat doesn’t produce. Combined with dry-aging for a minimum of 14 days, our short ribs arrive with more flavor development than conventionally raised short ribs of the same size.
These cut cleanly off the bone after braising and work across a range of applications, from a classic braise to a smoker to a slow afternoon in a Dutch oven.
COOKING NOTES
Best for: Braising or low and slow smoking.
Thickness: 2-3 inches bone-in.
Prep: Pat dry and season with salt and pepper. Sear on all sides in a hot oiled pan before braising.
Braise method: Preheat oven to 300°F. Place seared ribs in a Dutch oven with aromatics and enough liquid to reach halfway up the ribs. Cover tightly and braise 3 to 3.5 hours until the meat pulls easily from the bone.
Tip: The braising liquid reduces into a rich sauce. Skim the fat from the top before serving.
